In Sardinia, I believe the warmed anchovies with crisp bread are one of those quiet, confident offerings that feel like a secret passed between enthusiasts. The anchovies arrive warmed in the can, unapologetically so. For the uninitiated, that detail alone might sound strange, even off-putting. For those who love anchovies, it’s nothing short of thrilling.
These are Sanchorchio Anchovas from Cantabria, and they are exceptional: silky, deeply savory, perfectly balanced between salt and richness, with none of the harshness people associate with lesser anchovies.
This is not a dish trying to disguise itself or broaden its appeal. It knows exactly who it’s for. If you’re an anchovy lover, it’s a small miracle.
